Domaine Vaquer, Blanc de Blancs, 1991

There’s uniqueness, and then there’s this….
Macabeo is one of the most indigenous grapes to this region of the South of France. It thrives in these conditions. Used by the more commercial outfits, for its ability to make blends, adding fresh floral tones and savoury elements & juicy fruit. Domaine Vaquer shows how to master the grape, brining it to its fullest potential, to make exceptional wines, that can age with grace. Now in the peak of its life, this 1991 bottling shows plenty of oxidative characters, wild, nutty, savoury. A great aperitif wine with almonds, manchego cheese, olives and antipasti.
We snapped up the last few cases from Fred earlier this year, so why not grab a bottle of two before we never see this rare gem again….
Notes: Dry, Savoury, Medium Bodied
Pairings: Great aperitif alternative to sherry, Olives, Cheeses
