Made with 70 year-old south-west facing vineyards in the high altitude village of Bussières, this one hectare plot proudly sits on clay and limestone soils, overlooking the famous rocks of Vergisson and Solutré.
After being handpicked the grapes are loaded by gravity in a pneumatic press for a very long and gentle press from which only the purest juice will be preserved to make this cuvée. After decanting at low temperature, the must is then transferred into French oak barrels for a period of 11 months during which it will go through alcohol and malolactic
fermentations and ageing on its thin lees, with no batonage. Then the barrels are blended back in a stainless steel tank with their lees for another 6 months before being bottled.
Deep gold yellow color with a widely open nose exhaling citrus and wild flowers, the palate delivers a rich and complex structure with typical ripe stone fruits flavors and mouthwatering finish. The very well-integrated oak ageing adds that subtle hint of reduction, hallmark of a great Burgundy Chardonnay.
