“Les Acacias” is a single-vineyard Malbec from Fabien Jouves’ estate, Mas del Périé, in Cahors. Sourced from limestone and clay soils at high altitude, it is one of his most serious and age-worthy cuvées. Farmed biodynamically and organically, the grapes are hand-harvested, naturally fermented with indigenous yeasts, and aged for around two years in large oak barrels. Bottled unfined and unfiltered, this wine represents Cahors’ depth and mineral elegance at its finest.
Tasting Notes
Powerful yet refined, Les Acacias opens with deep aromas of blackberry, cassis, violet, and subtle spice. The palate is concentrated and structured, showing dark fruits, savoury herbs, and a firm mineral backbone. Silky tannins and vibrant acidity balance the richness, leading to a long, layered finish with notes of graphite and earth.
Food Pairing Suggestions
Roast leg of lamb with rosemary and garlic
Braised short ribs or beef cheeks in red wine
Venison or wild boar stew
Cassoulet or other hearty Southwest French classics
Mature cheeses such as aged Gouda, Pecorino, or Bleu d’Auvergne
About the winemaker
Fabien Jouves is a fifth-generation winemaker from Cahors who took over his family’s estate, Mas del Périé, in 2006. A leading voice in modern Cahors, he farms his vineyards biodynamically and works with minimal intervention in the cellar to let terroir speak clearly. His wines range from playful “Vin de Soif” natural cuvées with provocative labels to serious, single-parcel Malbecs like B73 and Les Acacias, which demonstrate the complexity and ageing potential of Cahors’ limestone soils. Jouves is regarded as one of the region’s innovators, combining tradition with a natural wine ethos.
