This white DO Valencia, by Neleman seems to have a strong personality and character, just like its name! But one should not be intimidated by appearances. The grapes, Verdil, Sauvignon, Viognier and Chardonnay, are harvested by hand and immediately chilled for 15 days at -5°C. This blend (and this technique) gives the finished wine a fabulous ripe white fruit note and balanced acidity. In addition, a partial fermentation in oak barrels gives it an extra aroma of toast and spice, and a velvety finish. But that is not enough. This, in fact, is also a certified organic and vegan wine, so it is good for the palate... and the conscience.
