Ornithologically-inspired winemaking, in the only continental climate in NZ.
Raising grapes in the Gibbston Valley is a wicked amount of work, but the result is a squeaky clean pinot gris from Hawskhead. Elegant minerality with fresh lime, peaches and fruit blossom.
Denis is a environmentalist political junkie. He had stints as the Associate Minister of Agriculture, Minister of Conservation, Minister of Land, the purchased a plot in the Gibbston Valley and planted Pinot Noir in 2001. He is the descendant of the 19th century naturalist William Swainson, a Fellow of the Royal Society, settled in New Zealand and named his first home "Hawkshead."
