Blackwater's Omerta, is named after the Mafia term "code of silence", and is a 100 per cent Carignan beauty from our friend Francois Haasbroek. A modern take on Omerta is: "Whoever appeals to the law against his fellow man is either a fool or a coward. Whoever cannot take care of himself without police protection is both." Drinking this will not necessarily lead to you a life of crime but it might harden the toughest of men.
Francois Haasbroek is, in our opinion, the man who made Waterford Estate the Stellenbosch legend that it is. But he always had a dream of going it alone. So when he’d finished his shift he’d go searching for under appreciated vineyards, ones whose grapes would disappear into blends, and then he’d stay up until 3am vinifying them. Then he'd head back to work at Waterford the next day.
