Named after Matija’s first sparkling wine, Mea Šipon begins its life with Matija hand-harvesting 43 year old vines at the crack of dawn. Squashed for 22 days in clay amphora, Šipon’s golden and delicious skins remain in contact with the juice before they’re moved into steel tanks and finally moved by gravity to their bottles where the fermentation party carries on, with each bottle individually dosed. No two bottles have the same personality and are individual pieces of funky winemaking and show off Matija’s quest to create unique wines while respecting what Mama Nature nurtures. Crack it open and join a picnic in a wild meadow on a hazy summer day where key lime pies lounge with sunkissed fruit.
Matic's humble nature is reflected tenfold in the wine he produces. He doesn't have a website and is only contactable via the odd message (and occasionally social media). He's a true obsessor when it comes to experimentation and exploration with his winemaking. A bookworm who will try anything to see if it works - and goodness knows it works and shows in his low intervention wines. Based in Stajerska, Slovenia, young Matic farms 9 hectares with the aim to preserve his piece of land for his children to play in and to carry on the good and honest work he does on the pale blue dot.
